Spinach Brownies

(Curtis May 2003)

350 deg for 45 min.

Combine:

1 C Flour

1 tsp Baking Powder

1 tsp Salt

Combine:

2 Eggs

1/2 C Melted Margarine (butter)

Add to above:

1 C Milk

Combine and add to above:

1/2 C Chopped Onion

1 LB Cheddar Cheese

1 Pkg Chopped spinach, cooked, drained

Pour into greased 13 X 9 pan & bake 45 min. @ 350

Serves 16

Cooks note: The "combine" stuff is just to make you feel important. Mix it all together in a stainless or glass bowl with your fingers. It feels squishy and great! Since your hands are already messy, smooth out the top after it is poured in. I use Crisco for the baking dish. I also use brick cheese that appears to be Monterey Jack and Cheddar (white and yellow mottled) that is less heavy than just cheddar. Living in Oregon by Tillamook or Wisconsin up's your cheese options. (grin)
